I got 77% on an economics midterm I got back today. I was thrilled considering I thought I potentially had failed it...phew! Economics is really tough for me, that's for sure. Yippee for most likely not needing to retake it in the summer!

Monday Pizza

Veggie pizza with onions, red & green pepers and broccoli; then half ham & applepines for lil sis and half pepperoni. Caeser salad to accompany. I love pizza. Pretty much from anywhere, especially warm straight from the oven.

Popin' Cookin'

My crazy friend Justin sent me these videos as a "blog request". Since I'm a super cool blogger, I decided I totally take requests, as long as it's not anything super abnormal. I gotta keep my readers happy!! ;) These videos are NUTS! It took me a little bit to catch on; but they are making "do it yourself" candy from pre-packaged materials in Japan!! (right Justin?!) It's wild!!!

(3) It cost me 258 yen.
(4) No food colouring was used. 112 calories.

26 on the 26th

Yesterday was a landmark for me - 26 years old. I like to call it "over the hill" but alas, I don't think many will agree with me. I feel a little too close to 30 for comfort...but, hopefully with age will come wisdom, experience and lots of other fun things! Thanks to everyone who celebrated my birthday with me and for me!

When I woke up, my sis & Mitch had bought me a present: a book about BLOGS!! How cool is that?! I am eager to start reading it and catch up on what I've been missing in the blog world.

Then, I got to work and had not one, but TWO cakes on my desk!! Brittany & my sister had both bought me one - such love :)

Then I actually had a productive rest of my day at work. I came home & went out to the casino to party it up with my buddies. Thanks for hanging out with me, everyone! Twas fun!

Today, I made a deal with my dad. I would go to the flea market with him if he would go to the mall with me to buy him a new cell phone. (he's a flea market lover) My dad had one of those flip phones, you know, the ones from SO last year?! His trusty cell phone had been failing him recently and not charging properly. He went to all extremes to attempt to get it to charge...check out his clamping procedure...

...but no dice to hold a charge. So, I got him into the 21st century with a BLACKBERRY!! Yup, my dad is now a proud berry owner. It may take him a little bit to get used to all the things he can do, but he'll learn!

And last but not least I went to dinner at Joey's with my fam. I simply adore their mushroom soup - so different than the usual cream of mushroom soups! JC was super sweet and had made us a quinoa cake to have for dessert - mmmmm so yummy AND quite healthy. It doesn't have any flour in it, which is neat, and it's not super hard to make. I've only made it once and it was good, she's much better at making it more moist than I am though. (the strawberries & cool whip are an after market product!)

Moist Chocolate Quinoa Cake

2/3 cup white or golden quinoa
1 1/3 cups water
1/3 cup milk
4 large eggs
1 tsp. vanilla extract
3/4 cup butter, melted & cooled
1 1/2 cups white sugar (we only use 1 cup)
1 cup unsweetened cocoa
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

1. Bring quinoa & water to a boil. Cover, reduce to simmer and cook for 10 minutes. Turn off heat& leave covered saucepan on burner for another 10 minutes. Fluff with fork & allow quinoa to cook.
2. Preheat oven to 350 F.
3. Lightly grease 2 8-inch round cake pans. Line the bottom of the pans with parchment paper.
4. Combine milk, eggs & vanilla in food processor.
5. Add 2 cups cooked quinoa & butter & continue to blend until smooth.
6. Whisk together the suga, cocoa, baking powder, baking soda & salt in a large bowl. Add the contents of the food procesor & mix well.
7. Divide batter evenly between 2 pans and bake on centre rack of oven for 40 - 45 minutes or until a knife inserted in the centre comes out clean.
8. Remove cake from oven & cool completely in the pan before serving.

Shannons note: this cake tastes great with raspberries and/or strawberries on it!!

There have been a list of new words added to the Oxford English Dictionary this week. The majority of them are slang and not actual words (ex: OMG) which puzzles me slightly, but I guess if a word is used that often, may as well put it in the dictionary! According to the Globe and Mail article, these terms are commonly found outside of the online world. I can see that, but don't really know if I'm going to start including "LOL" in any of my papers at school anytime soon.

Brief example of words added:
- OMG (short for “Oh my God,” or sometimes “gosh,” “goodness”)
- Wassup (a contraction of “what’s up?”)
- LOL (“laughing out loud”)
- Smack talking ( to “use insulting speech, especially to irritate or annoy someone”)
- Muffin top (which Oxford defines as “a roll of fat visible above the top of a pair of women’s tight-fitting low-waisted trousers”)
- TMI (“too much information”)
- Couch surfing
- Party crasher

I'm watching House Hunters International currently and the couple is buying a vacation home in the south of Spain - GORGEOUS!! Did you know you can see Africa from the water? Neither did I! I should really limit my consumption of watching this show - it makes me wish I had lots of money to travel and buy vacation homes, and well, let's face it...that's defs not happening any time soon. Maybe once I move out of my moms house...

Wedding Flowers

Don't worry, I am fully aware that I am not engaged and fully aware that a wedding of my own is NOT in my immediate future (that I know of!) Yet, I always end up with wedding stuff surrounding me and as I think you all know, I love weddings. Below are some color combinations of flowers that I love!

Coral - it's hard to find a coral flower that isn't too pink or too orange...
I think these shades of purple and bright yellow combinations are my favorite. Love the far right one with bright green.

I think a dark, classic red is gorgeous & tradiational.

A Human Voice

“You pretty much call people on the phone when you don’t understand their e-mail,” says Matthew Ballast, a executive for a publishing company.

In an article in the New York Times last week, writer Pamela Paul discussed the new found phenomenon of not talking on the phone much anymore. The above comment struck me as very true; I find that we email & text so much more nowadays. And I'm totally good with that! The situation that comes to mind first is at work - I would much rather email someone who has a question about swimming lessons than call them. If I call, I listen to the phone ring, listen to their voicemail and then leave a long winded message to get them to call me back. Then, they will follow the same procedure to call me and will likely wind up leaving me a message in turn. Email, however, can be sent at any time of day & is very unintrusive.

I guess work is really the best example of my preference of email/texting usage because I also prefer texting to calling when trying to get a shift covered. I can send one mass text in about 15 seconds and within 3 minutes have a response and be good to go. Again, with phone calls it would take me much longer.

According to Nielsen Media, voice spending on cell phones & land lines has been trending downward. Text spending is expected to far surpass it within three years - definitely shows what our generation prefers! Obviously there are pros & cons, and I could likely argue this either way, but this article beautifully outlines the downward trend of phone calls.

I think I have mentioned this before, but Ellen Degeneres has got to be the funniest person on tv, hands down. It comes so naturally to her to be hilarious!

She had Jimmy Fallon on her show today & this video was featured. It is Jimmy Fallon & Bruce Springsteen singing the song I just posted "Whip my hair" by Willow Smith, except in their own version. So hilarious - make sure you listen to the ACTUAL song (two posts below) first!!!

Oh the places you'll go...

Heidi has decided her and Timmy are making the big trip over the Australia in July to see her brother who is living there. I cannot even comprehend the amount of fun they are going to have!!!! Heid, can you take a picture of some of these for me please? I think it will be a super fun experience for them and I'm not going to lie, I'm slightly jealous! hehe

A girl that I know from work left for India today for a trip her school - travelling to India is on my bucket list actually. I think learning about the culture in a country that is so vastly different from Canada would be neat. Oh, and seeing the Taj Mahal would be phenomenal!

The other place I think would be really cool to see is the other side of Canada: Nova Scotia, Newfoundland, Prince Edward Island etc...from what I understand the scenery is gorgeous!!!

I'm heading to bed to hopefully have sweet dreams of lush vacations...

My mom had a tooth extracted on Monday and it was really bugging her today. Who better than to investigate than Dr. Pants? It was quite humorous watching him attempt to see the unknown issue my mom thinks she has. Gotta love hanging out with the family...

I find he is a hate him or love him type guy & I definitely choose the latter. I love Dr. House. I think he is witty, clever, smart and oh-so-entertaining!


I am trying to work on a couple homework assignments and twice in the past couple hours my laptop screen has done this:

The screen gets this weird white and blue pattern all over it and nothing helps/changes/fixes it until I turn off and restart my laptop. I'm scared!!

Fridays party was a fundraiser for the Heart & Stroke Foundation and a bunch of us from work went. We totally had a blast dressing up in our saris and fancy jewelry! I am going to post Facebook albums of those pictures so stay tuned. 

Last night, it was Aliya's first birthday party! Aliya is my friend Ritas daughter...I can't believe she is 1 already!! How time flies.

Paneer & Prawns

JC & I kicked off our Indian weekend by having some prawn and paneer pakora pre-studying at SFU tonight. Pakoras are a type of fritter; I don't know how else to explain them but they are soooo delicious (see above). Now, we are diligently sitting at our laptops so that we can party it up this weekend without feeling guilty!

Wedding Obsession - via Cake Boss

I am watching "Cake Boss" on TLC as we speak. I really enjoy it because a) I love kitchens b) I love the final product of their cakes & the talent they have c) I love how close of a family they are and how the bakery is a family business and d) They frequently make wedding cakes which I get so intrigued with.

Via, Buddy Valastro answered a few questions about wedding cakes & tips every bride and groom should consider before choosing a wedding cake designer:

Here are Buddy’s Top 5 Questions to Ask: 
1. Are they a reputable company? How long have they been in business?
2. How well do their cakes taste? Arrange a tasting. “A tasting is a great way to get to know the bakery and ask more questions,” he says.
3. How do they deliver? “Do they have refrigerated trucks or will the cake go in the back of their Toyota?”
4. How many cakes can the company do in a weekend? How many can they handle? (Buddy does 50-60)
5. Ask to see their portfolio. “Their portfolio showcases their work, which will prove they have talent. Don’t just show them a picture and have them say, ‘yes I can do that’ without proof of previous work.”

Chili n' Corn Bread

I made good ol' fashioned corn bread and chili for dinner this eve. I've made chili a bajillion times, but I've never made corn bread. I used a recipe I found on, which I have used a lot of other recipes from there before and really liked them. This cornbread was fine, but definitely not amazing. I was excited to post the recipe here if it was really yummy but no dice - I'm going to try it again another time with a different recipe. Oh well; win some lose some. When I make chili, I always make a veggie chili and a meat chili and those turned out well.

I've never known what to my in my blog profile (or ANY profile/"about me" for that matter) when it asks. Today, however, I came across a random quote that I really liked and chose to adopt. So, now my blog profile has a photo (the dolphins & I in Mexico - love it) and a quote: "In the morning I get out of bed. After that, you never know."  I think its quite clever and mischievous!
