I am in Kelowna for work today and tomorrow - looking at some different methods of registration & programs at the YMCA here. Fun fact du jour: Premier Christy Clark was on our flight here this morning!

I have a paper due tomorrow though so I am going to work on that now that I am comfy cozy in my hotel bed now. I was in charge of booking a hotel and mistakenly booked a kinda yucky one. Whoops. I Googled "hotels in Kelowna near Kelowna YMCA" and there are SO many - I got overwhelmed. It's only one night so I will survive!

I meant to take a picture of something here, since I assumed it'd be sunny, but it's been rainy here so I googled a photo instead. Here is where I WISH I was staying! (some random house on the lake, gorgeous!!):

I think I am finally on the mend! I've started eating solid foods again, which is great, however I can't eat very much at a time because a) I get full b) I have to eat incredibly slow and c) it still hurts a lot when I swallow. So, it's getting better; slowly but surely! I ate my first solid meal at Applebees with my Aunty Coralee yesterday: french onion soup and mozzarella sticks. (oh, and a few of her fries!) It was delicious!

This weekend I am spending trying to finish a paper that is due on Wednesday. I am trying to finish it because I am going to Kelowna for work on Tuesday/Wednesday and likely won't have much time to work on it. It's a long paper and I have no interest on the topic - it's an organizational diagnosis on the movie Moneyball. If you're a baseball fan, this is a great movie, if you are not a baseball fan, not such a great movie!

the party sandwich.

I read this adorable article via The Globe and Mail  entitled "My love affair with the party sandwich" and immediately I felt connected to it. That sounds silly, but when you hear "party sandwich", you immediately think tuna, egg, ham on crustless, white bread sandwiches and family events. Am I right or am I right?!

I still don't know that I understood the purpose of the article, but it just really talked about the traditional party sandwich and how it is so universal: we serve them at baby showers, funerals, after church get-togethers, teas, parties and so much more. And, people really just like the regular types! Nothing fancy schmancy, just a good, classic sandwich.

My favorite is egg on whole wheat. What is YOUR favorite type of party sandwich?

carmelized brussel sprouts w/ pistachios.

I saw this recipe on Twitter via this Healthy Home Recipes link. I really want to try it!!!

  • 4 lbs brussell sprouts
  • 1/2 cup unsalted butter
  • 4 small red onions, cut into strips
  • 1/4 cup red wine vinegar
  • 2 tbs white sugar
  • salt and pepper to taste
  • 1/2 cup coarsely chopped pistachios
  • Place brussels sprouts in a steamer basket over boiling water. Cover saucepan and steam 8-10 minutes or until Brussels sprouts are tender yet crisp. 
  • Melt the butter in a deep skillet, add the onions and 3 tablespoons vinegar; cook until onions brown.
  • Add the brussels sprouts, sugar and remaining vinegar. Saute over medium heat until the Brussels sprouts are lightly caramelized.
  • Season with salt and pepper to taste and garnish with pistachios.

one week today.

I had my pesky little tonsils removed one week ago today. Hooray?

My throat is STILL really sore to talk, eat, drink and anything that involves swallowing. I am still tired, low energy and want to sleep a lot. Hoping those all start to subside as it has been 7 days now...I do feel overall better since the surgery but I don't feel all that well day to day right now. I think I will be happy to have had them out in the long run, but not eating and not talking really sucks!!

What else? I am heading to my aunt/cousin's tomorrow to stay there for a few weeks and hang out with my cousin Cameron and their dog. Harley is a ginourmous great pyrenees doggy - she's super cute but really slobbery. I will post some photos of her :)

I sat at home this evening and tried to get some homework done but instead watched this super cute movie on TV. It's just a nice, feel good, cute movie:

thinks i'd like to cook this summer

I haven't been cooking much lately for a variety of reasons: school, work, surgery etc. but I'd like to have a few goals to make this summer, perhaps somewhere with a lovely lake view and I will invite my friends & fam over! 

1. Potato Gnocchi. I have never eaten gnocchi in my life, but it seems fairly easy to make and it seems like it's something that everyone in my family would like! (which is a difficult task...) PS - a sauce is still TBD for this, as are other things to be served with it.

2. Falafel! Being vegetarian, I adore falafel. For those of you who don't know, it's a chick pea patty flavored with garlic, cilantro and other spices. JC made some a few months ago and it was SO good. Can be used in a pita type shell (as see below), in salad or on their own.

3. Sweet potato fries. A classic restaurant side these days; I would love to try making these myself! My friend Shilo made them herself years ago and they were absolutely amazing. I remember her saying she used organic yams and coconut oil so that is what I would like to do. If I can make them taste half as good as hers, I'd be in business! 

day 6 update.

Is it day 6? Do I include the day I got surgery?! Who knows...I got surgery last Friday (June 15) so whatever day that makes it. Day 5? Day 6?!

I can speak a little bit now; only in small chunks and it exhausts me. My ears are REALLY hurting today and it still really hurts to swallow. I'm still taking my lovely T3's! I originally was planning on going back to work tomorrow however that won't happen. The surgeon told me I should be off for 12 days, so I will go back early next week and I'm sure I will be fine by then.

Happy first day of summer, my friends! I'm glad Mr. Sunshine has made a slight appearance for us today.

bye friends!

Two of my good friends have left me for new adventures in COMPLETELY new countries!

Eliza has left to be with her hubby in Taiwan and JC has left to work on a cruise ship for the summer. They both are going to have a fabulous time and come back with great experiences, pictures and stories, hopefully! I will miss them both SOOOO much.

JC is going from New York to Bermuda on Celebrity Cruise Lines from now until September 3. She is working with kids & youth on the ship of some sort - what exactly I don't know, but I think she will learn lot, get a great tan and have a multicultural experience like none other! I will miss her lots, but at least it is not a huge period time and a it's a super great work experience for her.

Ahhhh so beautiful in Bermuda...
I am grateful for the type of friends these gals are - not afraid to try something new and not afraid to have an adventure! Talk about major life experience. I am excited for both of them, but also can't wait until they get home :) xoxo!

day 3: tonsil-less update.

I haven't gotten out of bed yet today,  but I have managed to utter about 15 words today which is progress from my weekend of silence! I have also eaten two cups of pudding today which went down quite well. I didn't go to school today because I haven't showered in quite some time (ew, I know!) and it was a lot of effort to get out of bed and do all that. My throat is still SUPER sore; but maybe a fraction less sore than yesterday...just maybe. I'm still taking the T3's like candy because I am scared to stop them and having major pain!

On the plus side, I have been quite productive on my work emails and going to begin some homework now!

Know what I would kill for right now?? These:

A big plate of cheesy, crunchy nachos from Boston Pizza with salsa, sour cream & guac! YUM!

They didn't lie when they said it would take a while for these things to heal! I feel no better whatsoever. I did manage to go lie on the couch downstairs though for a good part of the day today and also played a riveting game of Scrabble with my siblings. I have eaten 2 popsicles, some alphagettis and a few bites of mashed potatoes today. I think I am going to head to bed soon.

fancy weddings

I found this section, entitled "Wedding & Celebrations", on the New York Times website. It is so fun!! It sadly doesn't have wedding photos of the couples but it is pretty much the fancy couples of NYC. It's says their jobs, where they graduated from school-wise and who their parents are. So interesting to see how they met - reminds me of Sex & the City...

business lessons from a 10-month old

I read this article via Inc.com, a small business & entrepreneur website and it's super cute/interesting! One CEO & dad's business lessons from his 10 month old daughter:

1. Always be curious.
2. Celebrate the small things.
3. Get back up again.
4. Don't hold grudges.

This is a nice reminder once in a while. So much we can learn from kids, even in the business world!


My throat is a little on the sore side to say the least after I got those pesky tonsils removed yesterday! However, it's only slightly more painful than having a bad case of strep throat which I am fairly used to.

It reaaaalllly hurts to swallow. It also reaaaalllllly hurts to talk. So I have a blank Word document on my laptop open so when my family comes to check on me I can "chat" with them - haha. My parents and siblings have been very helpful so far!! My sister hung out at the hospital all day with me and at home last night with me. Then I woke up to mom shining a flashlight in my face around 1 am to make sure I was still alive... They're great nurses!! Xoxo

I've gotten some homework done today (only because it was due at 7 pm tonight) and have not gotten out of bed thus far except to use the washroom. I have eaten 3 Popsicles since Thursday at 10 pm and dranken a bit of water. I'm super duper hungry but the thought of swallowing is far outweighing my hunger.

Today is the day I get my beloved tonsils removed. At 12:50pm my sister/weekend nurse is taking me to the hospital; well, the Jim Pattison outpatient/day care surgery place to be exact. I'm sure I will be blogging lots over the next few days since I will be in bed bored. Wish me luck! Farewell tonsils! Let's hope surgery ACTUALLY happens this time...

Between Pants and I these days, we should probably just get a permanent room at a walk-in clinic with our medical issues. He had a weird chest pain a few weeks ago so he had to go get blood tests done. I have been having super duper swollen feet/ankles/legs/eyes lately and had to get blood tests done as well so we went on a sibling blood test date. It was cute.

I forgot to update y'all and let you know that this Friday (as in June 15) is my new surgery date to get my tonsils out. I go to my family doctor tomorrow to make sure my blood work is all ok regarding my cankles and to make sure surgery is still a go. I've avoided the cankle topic on the blog so far because, frankly, it's a little embarassing...see photo below...keep in mind they got much worse after that photo...

Pants' other medical issue last night involved a nasty can of beans. I will save you the visual of the actual cut, but it's on his right hand middle finger and luckily it didn't require stitches but we did go to emergency just in case.

innovations, anyone?

I've added the NY Times to my repertoire of daily readings starting today. Lucky you - you get more interesting stories from the world a la the Shannon perspective!

A teacher of mine this semester sent this article out via email because of some of the relevance to a class, but it's soooo interesting. A look at innovations in the future, starting with # 1 - Electric Clothes! Interesting to think of that our world could be so different that it currently is. I have a feeling my dad & this guy might really enjoy this read!

This article via the Globe and Mail is an interesting one! It compares men against women in the workplace. Some interesting data for y'all:
  • Women work longer hours than men: 11% of women work 6 to 7 days per week compared to 7% of men
  • More than 50% of women work 9 or more hours per day, compared to 41% of men
  • When on vacation, 68% of women work, including things like checking emails; compared to 62% of men. 
  • Women are more honest: 1 in 5 men lie about what constitutes a "sick day"; only 1 in 7 women do the same.
The question of the day is...do women make better employees? Why or why not?

My new fave snack: dried seaweed. I could eat this by the bajillions. It's so good. It's the perfect amount of saltiness, crunch and flavor in one little paper-y bite size piece. Amanda & I have had a thing for this lately, and she was at Costco yesterday and bought me a WHOLE BOX! Best gift ever. Apparently it was only $10 for the whole thing (36 packages). Usually they are about $1 per package so that's a great deal. Yay for surprise gifts!!

happy birthday min!

My dear friend Min turned 30 last week & she went to Vegas on the weekend of her actual birthday so we celebrated it today. We had a giant group of us that went for dinner and had a great time with steak (prawns for moi!), friends, babies and wine.  Min has three nieces between the ages of 4 - 8 months who are freaking adorable, plus a nephew who is three years old and too cute. I wish Minder all the best for so many years to come - she is a great person with a huge heart and she deserves nothing but the best. Happy birthday Min!!
